Dully Selection was founded in early 2019 by Christian Dully. Christian has loved whisky ever since trying his first Laphroaig outside of the distillery on a rainy Islay day in 2003. Over the years, Christian has travelled extensively through Scotland and can regularly be seen at whisky shows and festivals around Europe. In 2016, he and his close friend Pascal Galli began to host a series of whisky tastings to open up rare bottles and to taste them head-to-head with sister bottlings and casks. C. Our preferred style is (ideally tropical) fruit forward, bourbon cask whiskies that let the spirit shine. However, we also love clean (unsulphured) sherry cask whiskies, where the sherry accentuates the spirit without completely overwhelming it. In our experience, there is no shortcut for age, and the very best whiskies of all time have matured slowly, often in inactive refill casks, for decades. With very few exceptions, great complexity only comes with time. While we strive to find such casks, we only want to bottle whisky where the current price/quality ratio is justified, and will therefore also bottle exceptional younger whisky from first fill casks, if we believe the bottling to deliver great pleasure for the price. What makes these bottlings different is that these bourbons have spent several years aging in Kentucky, where the high heat and temperature changes make for very exctractive aging, before moving the entire casks to Scotland for a cooler, gentler aging in order to build complexity for several more years. This means that these bourbons maintain their corn-based sweetness, while gaining a complexity that we normally associate with single malt whiskies. https://images.squarespace-cdn.com/content/v1/5d82357f7ee7822e43f3c055/1568824104824-3HCCHRLNXJGQ7WFWLKFW/Demijohns.jpg Bottlings - Cognac On our journey to find quality products for whisky lovers, our biggest discovery was a treasure trove of great casks in the world of old cognac. While we knew cognac to be a high-quality product, the majority of cognac that people have tried comes from a handful of large producers, who generally adulterate their fantastic base spirit through the addition of sugar, caramel colour, and boisé, or wood concentrate. This diluted, homogenized cognac is then "premiumised" through expensive marketing and fancy packaging. What we discovered has nothing to do with the above. We found small producers and distributers whose cognac, straight from the cask, at cask strength and without any additives, reminds us irrevocably of the golden 1960s of the whisky world, when the best Single Malt Scotch Whiskys were produced. We discovered a Petite Champagne cognac from 1967, whose rancio notes remind us of the tropical fruit notes in 1960s Bowmore. We discovered ultra concentrated 40 year old Grand Champagne cognac, which reminds us of cask-strength, sherried 1950s Glen Grant or even Macallan. We discovered a 1965 Borderies cognac, whose intense notes of cassis can make a blind-taster think it was an old Irish Whiskey. We do not know how long it will be before these old, incredible cognacs will all be blended away or bottled, and the world of cognac will begin to resemble the world of whisky. But we will make the most of these treasures in the meantime. A note on ages and vintages: officially stated vintages on cognac have only been allowed since the late 1980s, and are strictly regulated. Therefore most bottlings of cognac will strongly hint at the age and the year of distillation, without stating "Vintage 1967" on the bottle. https://images.squarespace-cdn.com/content/v1/5d82357f7ee7822e43f3c055/1568903521728-TTUIU1IYY797NNUB3QHS/Pineau.jpg Bottlings - Pineau des Charentes Pineau des Charentes is our only non-spirit bottling. It is a fortified wine made in the same region as cognac, and usually has an abv between 17% and 18%. Pineau des Charentes is made by taking grape must (juice) from the same grapes that are used to make cognac, and "fortifying" this through the addition of eau-de-vie, or the same spirit that, when aged, turns into cognac. This mixture of grape must and eau-de-vie is then aged in casks that were previously used to age cognac. A good Pineau des Charentes has great complexity as well as good acidity to balance out its natural sweetness. It should be served chilled, and can last for weeks once opened. We decided to bottle Pineau des Charentes because it has tremendous complexity and because it is wonderful to enjoy during the hotter months of the year, when cask strength whiskies may not be as appealing. Our Sélection Pineau can be served as the ideal apéritif, used to refine a cocktail, or paired with food, particularly with foie gras. Our even more complex Très Vieux Pineau has enough body and complexity to be enjoyed with a cigar or makes the ideal digestiv for a contemplative evening. We consider both casks for immediate bottling and casks for further long-term aging. We are open to all different styles, but the quality of both the cask itself as well as the spirit must be top tier, while the prices must be reasonable. We refuse to bottle OK whisky at high prices. If the spirit is too young or imature, but of great quality, we will consider purchasing the cask for further aging. If the spirit has flaws or has passed its peak, the cask loses its appeal to us. We try hundreds of samples per year in order to find a handfull of casks that we consider to be special enough to bottle ourselves. We want to provide value to the whisky world, so we want to find and bottle whiskies and spirits that are truly special, for a great price. This treasure hunt begins with reaching out to producers or bottlers whom we know to have great products. We tend to focus on smaller producers who may be overlooked, but we will consider larger producers as well. We will then visit the producers to discuss the styles of spirit that we are looking for, and will frequently taste a range of the newest or upcoming releases to get an idea of what the producers consider to be good at that moment. We will then visit their warehouses to try to find the most special casks. If a cask appears to have potential, based on our own taste and experience, we try the spirit in the warehouse, straight from the cask. We will then take samples home to try them again in comparitive tastings under different conditions. If we continue to believe that the spirit is excellent, we enquire about the price. We begin by determining which distilleries produce distillate that is both of the highest quality and most likely to provide us with the flavour profiles that we prefer after an anticipated period of aging. As the whisky we put in cask now will not be drunk for many years, or even decades, we need to make this decision based on our own experience of tasting whiskies as they mature and knowing which current distillate will yield the aged character that we hope to achieve. Cask Selection We then handpick individual casks to age our spirit in long-term. This means bourbon casks from the best bourbon distilleries, as well as sherry casks that contained high quality sherry, with no trace of sulphur. We match the casks to the spirit that we plan to age in them, and already have an idea of how long we want to age the spirit when choosing the casks, though time and fortune ultimately determine when the whisky is mature, no matter what we plan. Constant Monitoring of the Spirit Once the spirit has been filled into the hand-selected casks, it needs many years of maturing in the right conditions. During this time, it must be constantly monitored to ensure that it is aging as desired. Though our casks are chosen with care, it is impossible to tell how a particular cask will turn out without closely monitoring it through regular tasting. Aus Liebe zum Whisky haben wir unsere Firma gegründet. Unser bevorzugter Whiskystil ist fruchtbetont, idealerweise mit tropischen Fruchtaromen wie Passionsfrucht und Mango. Aber unsere Liebe gilt auch guten, schwefelfreien Sherryfass Whiskys, bei denen der Sherry den Whisky ausgleicht und nicht überdeckt. Bei Whisky gibt es keine Alternative zu Zeit und Geduld. Die besten Whiskys reifen langsam, oft Jahrzehnte, in inaktiven Fässern und bekommen so enorme Komplexität. Während wir uns bemühen, solche Fässer zu teilen, wollen wir auch nur Whisky abfüllen, bei dem das Preis-Leistungs-Verhältnis gegeben ist. Aus diesem Grund werden wir auch jüngere Whiskys abfüllen, solange es sich hierbei um aussergewöhnliche und besondere Abfüllungen handelt. Wir schränken uns auf keinen Whiskystil ein. Das Besondere an diesen Abfüllungen ist, dass diese Bourbons nicht nur traditionell in Kentucky reiften, wo die hohen Hitze- und Temperaturschwankungen für eine sehr aktive Reifung sorgen, sondern dass sie danach im eigenen Fass nach Schottland transportiert wurden, wo sie im kühlen schottischen Klima langsam weiterreiften um Komplexität zu gewinnen. Diese Whiskys behalten die Süsse des Mais Destillats und das Vanillin von neuen Fässern aus amerikanischer Eiche, zeigen aber gleichzeitig sehr viel ausgewogene Komplexität. https://images.squarespace-cdn.com/content/v1/5d82357f7ee7822e43f3c055/1568824104824-3HCCHRLNXJGQ7WFWLKFW/Demijohns.jpg Abfüllungen - Cognac Auf unserer Suche nach hochwertigen Produkten für Whisky-Liebhaber war unsere grösste Entdeckung die Welt des alten, fassstarken Cognacs. Zwar war uns schon vorher bekannt, dass Cognac ein edles Destillat ist, aber die grossartige Qualität, die wir in der Charentes fanden, erstaunte uns. Die Mehrheit des Cognacs, den die meisten Menschen probieren, stammt von einer Handvoll grosser Produzenten, die einen fantastischen Grundstoff durch die Zugabe von Zucker, Karamellfarbe und Boisé, oder Holzextrakt, verändern. Dieser verdünnte, homogenisierte Cognac wird dann durch teures Marketing und ausgefallene Verpackungen "premiumisiert." Der Cognac den wir entdeckt haben, hat nichts mit homogenisierten Massencognac zu tun. Wir arbeiten mit kleinen Produzenten und Händlern, deren Cognac direkt vom Fass, in Fassstärke und ohne Zusatzstoffe, an die besten Whiskys der goldenen 60er Jahre erinnert. Wir fanden Cognac aus der Petite Champagne aus dem Jahr 1967, dessen Rancio-Noten tropischen Fruchtnoten der 1960er Bowmores gleicht. So wurde speziell für uns ein hochkonzentrierter, 40-jähriger Grand Champagne Cognac aus mehreren Fässern zusammengestellt, um besonders an die Aromen von alten Sherry Glen Grants aus den 1950er Jahren zu erinnern. Wir entdeckten einen 1965 Borderies Cognac, dessen intensive Noten von Cassis einen Geniesser an alten irischen Whiskey erinnern. Zu diesem Zeitpunkt wissen wir leider nicht, wie lange wir noch solche alte, einzigartige Cognacs probieren und anbieten dürfen, bevor sie alle vermischt oder abgefüllt werden, und die Welt des Cognacs beginnt, der Welt des Whiskys zu ähneln. Aber wir werden in der Zwischenzeit für diese Schätze kämpfen und sie mit Freunden teilen. Ein Hinweis zu Alter und Jahrgängen: Offiziell angegebene Jahrgangs-Cognacs sind erst seit Ende der 80er Jahren erlaubt und unterliegen strengen Vorschriften. Es handelt sich hier um einen aufgespriteten Wein, der in der gleichen Region wie Cognac hergestellt wird und in der Regel einen Alkoholgehalt zwischen 17% und 18% hat. Um Pineau des Charentes herzustellen, wird Traubenmost aus Cognac Trauben durch die Zugabe von ungereiftem Cognac Destillat aufgespritet. Diese Mischung aus Traubenmost und Eau-de-Vie wird dann in ehemaligen Cognac Fässern gereift. Ein guter Pineau des Charentes zeigt enorme Komplexität und einen guten Säuregehalt, der die natürliche Süsse ausgleicht. Er sollte kalt serviert werden und kann nach dem Öffnen bis zu mehreren Wochen genossen werden. Wir haben uns entschieden Pineau des Charentes abzufüllen, weil er enorme Komplexität zeigt und besonders während den heissen Sommermonaten erfreut, wenn Fassstarke Whiskys zu intensiv sein können. Unser Sélection Pineau kann besonders gut als Aperitif serviert werden, ist aber auch perfekt zur Verfeinerung eines Cocktails oder als ideale Begleitung zu Speisen, insbesondere Foie Gras. Unser Très Vieux Pineau, der noch multidimensionaler ist, hat genug Körper und Komplexität um mit einer Zigarre genossen werden zu können. Auch als perfekter Begleiter zum Ausklingen eines Abends eignet er sich besonders gut. Wir probieren jährlich hunderte von Whiskys und andere Spirituosen, um ein paar hervorragende zu entdecken und abfüllen zu können. Wir wollen der Whisky-Welt einen Mehrwert bieten, indem wir ausgezeichnete Whiskys zu fairen Preisen finden und abfüllen. Der erste Schritt unseres Prozesses besteht aus Besprechungen mit Produzenten und Abfüllern, meistens aus unserem Bekanntenkreis. In diesen Gesprächen stellen wir unsere Erwartungen, Wünsche und bevorzugten Geschmacksprofile vor. Bei uns sind auch eher unbekannte Brennereien von Interesse, da wir hier oft hervorragende Whiskys finden, die von anderen wegen den unbekannten Namen übersehen wurden. Als nächstes besuchen wir die Produzenten vor Ort. Hier bekommen wir eine Übersicht des Inventars und können interessante Whiskys direkt vom Fass probieren. Dadurch entdecken wir versteckte Schätze und bekommen gleichzeitig eine Vorschau auf gute zukünftige Abfüllungen, da wir auch junge Fässer probieren, die das Potenzial haben in ein paar Jahren perfekt zu sein. Dann besichtigen wir die Lagerhäuser auf der Suche nach besonderen Fässern. Wenn ein Whisky nach unserem eigenen Geschmack und unserer eigenen Erfahrung Potenzial zu haben scheint, verkosten wir ihn im Lager. Danach nehmen wir aus dem Fasslager Proben mit nach Hause und probieren sie dann in vergleichenden Verkostungen unter unterschiedlichen Bedingungen erneut. Wenn wir danach immer noch glauben, dass das Produkt ausgezeichnet ist, fragen wir nach dem Preis. Dies geschieht deshalb erst nach der Entscheidung für die beste Abfüllung damit wir nicht von Vorurteilen beinflusst werden. Zuerst besprechen wir, welche Brennereien momentan das qualitativ beste Destillat produzieren. Da der Whisky, den wir jetzt in Fässer füllen, erst nach vielen Jahren oder Jahrzehnten getrunken wird, müssen wir diese Entscheidung auf der Grundlage unserer eigenen Erfahrungen mit vielen jungen Whiskys treffen. Hier müssen wir einschätzen, welche Eigenschaften eines Destillates zu dem erwünschten Geschmacksprofil eines gut gereiften Whiskys führen. Fassauswahl Danach suchen wir einzelne Fässer für die langfristige Reifung unseres Destillats bei einem Fasshändler vor Ort aus. Wir begutachten nicht nur die Qualität des Holzes sondern suchen auch Fässer deren voriger Inhalt aus den besten Bourbons und aus schwefelfreien Sherrys bestand. Wir passen unsere Fasswahl an unser ausgewähltes Destillat an, da bestimme Whiskys meist zu bestimmten Fasstypen passen. Regelmässige Qualitätskontrolle des Destillates Nachdem die Fässer mit unserem Destillat gefüllt werden, müssen sie viele Jahre unter idealen Bedingungen reifen. Während dieses Prozesses muss der Whisky ständig probiert werden, um sicherzustellen, dass er sich wie gewünscht entwickelt. Obwohl wir unsere Fässer mit Sorgfalt auswählen, ist es ohne genaue Überwachung durch regelmässige Proben unmöglich, vorherzusehen, wie ein bestimmtes Fass reifen wird.
