Was für ein Unterschied drei Jahre ausmachen!
Wir haben in 2019 drei besondere Fässer Inchfad erwerben können. Inchfad ist ein getorftes Destillat der Loch Lomond Destillerie, welches bis ca. 2009 produziert wurde. Highland Torf ist hier schön mit einer gewissen Fruchtigkeit integriert.
Wir haben die drei Fässer (408, 411, und 412) nebeneinander probiert, und Fass 408 war klar unser Favorit. Danach vermischten wir die Muster der drei Fässer und waren von der Kombination aus Fässern 408, 411, und 412, sowie aus der Kombination von Fässern 411 und 412 begeistert.
Also liessen wir in 2019 Fass 408, sowie einen Teil des Vattings von den Fässern 408, 411, und 412, für uns abfüllen.
Den Rest des Vattings hatten wir wieder in Fass 408 gefüllt und weiter reifen lassen.
Wir haben es jedes Jahr wieder probiert und waren bei unserer letzten Degustation entzückt. So muss ein getorfter Highland Whisky schmecken! Es war also Zeit, den Rest des Fasses abfüllen zu lassen.
Der Torf ist jetzt viel dezenter als vor drei Jahren und ist auch viel komplexer geworden. Der Whisky ist eleganter, mit generell mehr Komplexität und einer schönen Fruchtigkeit. Wir empfehlen jedem, der die Chance hat, diesen Whisky neben der 14 Jährigen Abfüllung zu probieren. Man hat leider nicht oft die Chance, den gleichen Whisky während des Reifeprozesses zu probieren und zu vergleichen.

What a difference three years make 😊
In 2019, we purchased three excellent casks of Inchfad, a peated spirit produced at Loch Lomond distillery until around 2009. Good Inchfads combine intense peat with cereal and fruit notes.
We tried the three casks (408, 411, and 412) on their own, in addition to mixing them together in twos and finally all three together. Cask 408 was easily our favourite of the three, but we were very much impressed by the vatting of all three together, in addition to the vatting of casks 411 and 412.
So we bottled half of cask 408 on its own, in addition to a portion of a vatting of casks 408, 411, and 412. The rest of this vatting was reracked into cask 408, to see how it will develop in the next few years.
We tasted this vatting regularly and now, three years later, at 17 years of age, have found it to be at a beautiful sweet spot, ready to be bottled.
The peat has mellowed out and the whisky has drastically increased in elegance and complexity.
For anyone who has the chance, it is very much worth tasting this Inchfad side by side with the 14 year old version of the vatting. While we already liked it at 14 years of age, these three extra years have made all the difference, and it is a fantastic experience to be able to try the exact same distillate at different points in its maturation.
